What's For Dinner?!

As a Mum of 2 older kids, I've heard this question a LOT. For many years, it caused me to roll my eyes and groan. With all the other decisions we make in a day, this one seemed the most overwhelming.

They didn't want to eat what we were eating, we couldn't always eat together, I didn't always have what we needed.... not to mention the pressure of making sure every meal was well-balanced and I was "expanding their palettes" and all that stuff there. Don't forget school lunchboxes too....

Eventually I developed a system to organise both my head space and my kitchen in a way that works for me. It's designed to be flexible so you can chose which elements work for you to save you time, money and ease the mental load; and realistic too - we're not churning our own butter and losing entire weekends to meal prep either!

I love a good afternoon tea! Whether for Mother's Day, a birthday or simply an opportunity to catch up with friends, beautiful little bites that don't always have to take days to prepare.

  • Finger Sandwiches

    Always great to start with savoury options. Finger sandwiches with a couple of different fillings offers some lovely variety and a great foundation for the sweet treats to follow.

    Sweet tart cases are readily available making these quick and simple to put together, not to mention delicious and a beautiful centrepiece for the table. These are custard with fruit, lemon meringue and chocolate, nut and caramel. Bite size so you can try one of each!

  • Scones

    With cream and jam or jam and cream - I love them in any event and they truly are a non-negotiable at any afternoon tea really! Offer a variety of jams if you're feeling super fancy.

I like the motivation it gives me to organise myself on a weekend for the week ahead.
I've spent so much time stressing / being annoyed that no one else in my house can make any suggestions or sort what we're having for dinner and it's all on me.
So now we all have the conversations on the weekend about what we are going to have during the week for dinners. Then hubby can start prepping stuff when he's home from work first.
And the kids actually look forward to eating the dinners they've suggested - rather than me telling them what they're having and they don't want it.

I am the extremely proud mum of 2 and a happy (ok sometimes grumpy) wife.  My training is about as far from cooking as it gets (I was an accountant). But I've always loved cooking.
